A How To For….Eggs!

I’ve mentioned on here before that we go through a lot of eggs in our house. There are just so many different ways to use them! This is a tip I picked up a couple of months back but only just tested out today when I was reminded of them by a photo in my Facebook timeline. Talk about perfect timing. I was meant to make a bunch of food but was too tired, this saved me so I thought I’d share the tip to help others save time too.

Tip: Get perfectly cooked eggs by baking them in the oven using muffin tins. Lightly spray, crack eggs in and bake until cooked to your liking. Really, really quick and easy.  Eat them on their own, add them to a meal or freeze them. I made two dozen today, they won’t last too long with my boys around… ok, and me…oh and my husband… and that daughter of ours… ;)

    So…. do your eggs stick to the muffin tin horribly? I made egg muffins yesterday, (beaten egg with spinach, parsley, bacon and some coconut milk) and cleaning the tin was awful, even the silicone muffin tin. What sort of time do you use?

      Nope Anna! I have regular metal trays though so that might be the difference. I was *meant* to make the ones you just mentioned but after a few crazy weeks and an early start to celebrate Davis’ birthday this morning I was too tired to bother chopping food lol. I’ll be making them tomorrow or have Andrew make them instead.
